RECIPES- RIDGE GOURD( PEERKANGAY CHUTNY) :
Dry chilli- 4; tamarind-a little; sk in removed coconut duly scrapped-1 cup; garlic-4 pieces; ginger-a small piece.
Pour a little oil in the pan and sauté chilli, ginger, garlic tamarind and the Ridge Gourd. After they are cooled, grind them. Then pour oil and fry mustard and put the ground paste and sauté. Now, Ridge Gourd chutney is ready.
This chutney would be different from the normal chutneys.
Aappam flour-1 cup; papaya paste-1 cup; powdered jiggery-1 cup; scrapped coconut-4 tsps; cardamom powder- a little; ghee- as required.
Grind the papaya paste with the jiggery, aappam flour and scrapped coconut nicely. Then, pour ghee in the holes of the paniyaaram-tawa and pour the ground paste and turn it to both sides and take out as paniyaram. Sweet paniyaram is ready.
