No. 10 . Potato and Kidney Bean Salad
(Aloo Rajma ka Salad)

This is a tasty recipe for dish made of Potatoes (called Aloo in North India) and kidney beans (called Rajma in North India) . These two combine to give this healthy salad which can be cooked quite easily.

Serves: 4
Cooking time(approx.): 5 minutes
Style: North Indian Vegetarian 


4  potatoes boiled, peeled and cubed
2  cup(s) kidney beans boiled
2  onion(s) finely chopped
1  green chilli(es) crushed with salt
1  teaspoon(s) oil
salt, pepper and lemon juice to taste
fresh coriander or parsley to garnish 

  1. Pour the oil in a microwave-safe deep bowl. Add the onions and green chillies. Microwave uncovered on high (100%) power for about 2  minute(s). or till the onions are transparent.
  2. Stir in the pre-cooked potatoes cubes, kidney beans, salt, pepper and lemon juice. Microwave covered on high (100%) power for about 2  minute(s).

TIPS:

  • When the microwave cooking time for a step exceeds 2 minutes, it is highly recommended the contents be checked and stirred at regular intervals to avoid burning of food.
  • Standing time is a very important step as it completes the microwave cooking process of a dish. Ideally, allow the dish to stand for about 5 minutes before serving.

Serve chilled or at room temperature garnished with:chopped fresh coriander.

 

No.9 . Green Peas and Carrot Salad

(Matar Gajar ka Salad)

This a great vegetarian salad that is made of Carrots (also called Gajar in India) grated and cooked with milk and sugar. This tasty pudding is finished with a sprinkling of cardamom powder and garnished with almond slivers.

Serves: 4
Cooking time (approx.): 9 minutes
Style: North Indian Vegetarian 


2  tablespoon(s) ghee (clarified butter)
4  cups grated carrot
½  cup(s) milk powder
2  tablespoon(s) condensed milk
2  tablespoons sugar
2  tablespoon(s) raisins
2  tablespoon(s) chopped nuts almonds and cahewnuts.
½  teaspoon(s) cardamom (elaichi) powder
2  tablespoon(s) fresh cream beaten well
almond slivers for garnishing 

  1. Pour the melted clarified butter (ghee) in a microwave-safe large deep bowl. Mix in the grated carrot and microwave covered on high (100%) power for about 5  minutes.
  2. Mix in the rest of the ingredients except the fresh cream and microwave covered on high (100%) power for about 4  minutes.

TIPS:

  • Condensed milk can be replaced with khoya if available.
  • The quantity of sugar can be increased or decreased as per taste.
  • Ghee may be readily available off the shelf in Indian stores. However, it is important that it be fresh stock.

Ingredients:

10-12 Salad leaves

1 small cabbage (shredded)
1 Onion (Thinly sliced into rings)
1 Cucumber (Sliced into rings)
2-3 Carrots (peeled and thinly sliced)
1 Radish (peeled and thinly sliced)
1 banana (cut into rings)
1 Guava sliced
1 apple thinly sliced
1 tomato (thinly sliced into rings)
2tsp lemon juice
Salt to taste
Chaat masala to taste

Preparation:

  • Take big plate and arrange salad leaves.
  • Add shredded cabbage, onions, carrot, cucumber, and radish.
  • Now arrange tomato, banana, apples, and guavas.
  • Sprinkle salt and chaat masala. Pour lemon juice.

No.7. MIXED VEGETABLE SALAD RECIPE

This is a popular item in most indian parties.

Ingredients:
50gms French beans

3-4 carrots
1 small cabbage
100gms Broccoli (cut into florets)
1 Capsicum
salt to taste
1 Tomato (cut into thin rings)
2 green chilies(slit vertically)
Finely Chopped coriander leaves
1 lemon juice
Black pepper powder to taste

Preparation:

  • Cut and Steam the vegetables.
  • Add tomatoes, green chilies salt, pepper powder and lemon juice, and mix well.
  • Garnish with coriander leaves.

 No.6.  SPROUTED MOONG SALAD RECIPE

This is a healthy salad as it has sprouted moong which is rich in fibre content.

Ingredients:
1 cup Steamed Sprouted Moong

1 Onion chopped
1 Tomato chopped
salt to taste
Red chili powder to taste
11/2 tsp. lemon juice
1/4th tsp. roasted cumin (Jeera) powder
Finely chopped coriander leaves
1/2 tsp. grounded sugar (optional)

Preparation:

  • Wash and drain sprouts.
  • Add Onion, tomato and other ingredients.
  • Mix well.
  • Garnish with coriander.
  • Note: Other sprouted lentils can also be used in place of moong.

Kachumber salad is one of the easiest salds to make in the Indian Kitchen

This is asimple to prepare yet very delicious kachumber salad made from cucumber, onion and tomatoes.
Ingredients:
1/2 cucumber (kheera) (peeled and chopped finely )
2 Onion (Pyaj)(chopped finely)
2 tomato (tamatar) (chopped finely)
1/2 lettuce (kasmisaag) (chopped)
2 tsp lime juice
salt (namak) and pepper to taste
1 tsp vinegar (sirka)
1/4 tsp chilli powder
How to make kachumber salad:
  • Mix all ingredients well in a bowl

Ingredients:
2-3 cups of shredded cabbage
2 cups of carrots (shredded)
1-2 tomatoes (diced)
1/2 cup roasted peanuts (coarsely grounded)
2 tsp of freshly squeezed lemon.
Handful of cilantro or coriander leaves
salt to taste

1/2 kg papaya (papeeta) (raw)

1 kg Sugar (Cheeni)
3/4 litre water
a drop of cardamom essence

How to cook papaya lachha salad:

  • Peel and cut papaya into thin slices.
  • Make a sugar syrup of 1-string consistency and add papaya slices and cardamom essence.
  • Cook for 7-8 minutes.
